Just made this quick lunch between getting to listen to ANGELA DAVIS speak and going to some cool workshops!
Sweet Potato Black Bean Quesadillas
Recipe: Serves 1
- 1/2 cup mashed sweet potatoes
- 1 whole wheat tortilla
- 1/2 cup refried black beans
- 1/3 cup mozzarella cheese
- butter or ghee, for pan
- salt to taste
Spread a bit under half a cup of mashed sweet potatoes onto a whole wheat tortilla.
Then slather a bit under half a cup of refried black beans over the sweet potato mash.
Sprinkle on 1/3 cup mozzarella cheese and top with another whole wheat tortilla.
Grease a pan with butter and cook each side of the quesadilla until brown to your liking, about 5 minutes on each side for me.
Sweet potato * SO good for you. Loads of vitamin A (as beta carotene!), C, copper, manganese, and fiber! The vitamin A acts as an anti oxidant in the body to eliminate free radicals that harm DNA. Its important to know that the skin contains 3x more antioxidant activity than the orange flesh!
Black beans * High in folate, fiber and protein. They also have antioxidants called flavonoids and small amounts of omega 3’s.
Whole wheat tortilla * Contain far more nutrients, fiber, and protein than white flour tortillas.
