Roasted Fennel

If you like vegetables, you must make this this week. If you like licorice, you must go  preheat the oven, buy a fennel bulb, and roast it NOW.

Recipe:

Preheat the oven to 400.

Cut a fennel bulb in half long ways. Spray each side with canola oil. Sprinkle with salt and fresh ground pepper.

Place in a baking pan with 2-3 tbsps water. Lightly cover fennel with foil. Bake for 20-30 minutes.

Benefits:

Fennel * contains multiple antioxidants, including rutin, quercitin, and kaempferol glycosides. Also contains anethole, which may reduce inflammation and prevent cancer.
