This is just a quick post featuring a few things I have enjoyed lately and a simple recipe!
Local Mint Mojito ( π Gracie!)
Made with mint fresh from the garden, agave nectar, rum, soda and lime.
Grilled Veggie & Prosciutto Panini
Grilled onions, red bell pepper, green bell pepper, yellow bell pepper, prosciutto, and herbed mayo (dill, basil, lemon, salt, pepper).
Mom’s Blueberry Buckle
Butter, sugar, butter, flour, butter, butter, blueberries, sugar.
Whole Wheat Waffle with Almond Butter

This is me dangling a rambutan, the most delicious fruit on the planet. The photo was taken in Thailand, where rambutans are native (among other countries in SE Asia). Once you peel away the rubbery outer layer, a squishy ball of fruit is revealed. I can’t really describe the flavor, but its sweet and delicious.
That just might be the best pb swirl in all of blogland ;).
WONDERFUL meal! I’m a HUGE mojito fan and grow my own mint just for the sake of enjoying these wonderful cocktails! fyi…that swirl is badass

PS. The lemon-poppyseed loaf was INCREDDD. I had to modify it because I don’t have whole wheat flour in my house, and added a couple of other things (like lemon basil), but overall your recipe was a total inspiration. I love. I love I love. I’ll show you pictures…soon. π β€
Yes, when she bakes she doesn’t mess around with healthy substitutions. She’s straight up ballin. And I am so PUMPED that the loaf was yummy! I reallly want to see pictures! And you added basil, that is awesome. A bit more savory… Mmm.
I had freeze-dried rambutan once from TJ’s. I loved it — I hope to try the fresh kind someday. π

Freeze dried?! Really?! Thats so cool. I bet it was tasty, but the juicy plumpness of the fruit definitely adds to its deliciosity.
I’m going to have to go out and find some rambutan some day – what does it taste like?

I’m gonna definitely save that tofu recipe, I am always on the look out for good ones. Too bad my tofu cooking skills are pretty sucky.

I love the little Dr. Seuss loop at the top of your almond butter. It reminds me of the top of a soft serve!
