If you like pina coladas…

The inspiration for these muffins came from the house party last weekend. We made bomb pina coladas. So good that I wanted them for breakfast. However, because I am not an alcoholic, it seemed slightly inappropriate. So how else could I have a pina colada for breakfast other than in muffin form?

These aren’t very sweet until you bite into a piece of crystallized pineapple. Mmmm.

Pina Colada Muffins

Recipe: Makes 6.5 muffins (6 mamas and a muffita)

You know tha drill. Place all the dry ingredients in one bowl and all the wet in another. Stir ’em. Pour the wet over the dry and stir with a spatula with as few swoops as possible. Grease a baking sheet and divide the batter into 6 or 7 cups. Bake at 350 for 30 minutes.

Dry ingredients –
2 cups whole wheat pastry flour
2 tbsp brown sugar
1/4 cup shredded coconut (very lightly toasted first, if desired)
2 1/2 rings crystallized pineapple, finely chopped
a pinch of salt, ginger, and cardamom
a shake of cinnamon
1/2 tsp baking powder

Wet ingredients –
1 cup light coconut milk
the juice of 3/4 a lime (plus a tiny bit of pulp)
1 small egg
Optional: 1/2-1 shot rum, depending on how rummy you want them

Note: The next day when you go to have a muffin, make sure to nuke it for about 20 seconds. The heating causes the crystallized pineapple flavor to diffuse into the muffin and it’s even better than fresh out of the oven!


Coconut * coconut gets a bad rap because of its saturated fat content, but its fatty acids are mainly medium-chain triglycerides, not long-chain. The long-chain triglycerides are bad for our cholesterol levels, but coconut has been shown to improve cholesterol levels. Animal studies suggest that medium-chain triglycerides can increase metabolism

Whole wheat flour *  when you choose white flour over whole wheat flour, you are losing over half of the B vitamins, fiber, folic acid, calcium, zinc, phosphorous, copper, and iron. Whole grains reduce your risk for diabetes and have also been linked to weight loss and maintaining a lower BMI.

Also, tonight Pace and I went to dinner at a new Austin restaurant called Foreign and Domestic.

I got octopus! It is a bit chewy, but tasty. The highlight of our meal was the dessert.

Key lime tart with toasted coconut ice cream and black berry coulis.

Foodgasm to the max.

I polished that sucker off.

  2. Wow, thanks for the awesome recipe! A jar of crystalized pineapple is sitting in my pantry since forever and I couldn´t decide what to do with it, since I didn´t like it on my oatmeal as assumed. Phew, you saved me 😉 have to make these asap!

  5. Oooh, I love this recipe! I just bought a ton of crystallized pineapple and this recipe is calling out to me. I am seriously obsessed with all things tropical (probably because it’s always so cold and gloomy here =P) and can’t wait to try these. 😀
