Two quick and easy lunch ideas

Good morning! This post is going to be short and simple because I have midterms to study for. Tomorrow is Food Chemistry and Monday is Animal Biochemistry. Food Chem has been easy so far; it’s mostly ochem stuff. We have been studying sugars. I have some info on high fructose corn syrup and sugar in general that I would like to share with y’all soon. Just FYI, food companies are trying to get high fructose corn syrup’s name changed to “corn sugar.” Sounds less evil, right? Its true, though, that high fructose corn syrup is 55% fructose and 45% glucose whereas table sugar is 50:50.

Anywho! Quick and easy lunch idea #1:

Veggie Noodles with Salmon and Pesto

So satisfying.

1. Rub 4 ounces of salmon with pesto. Saute in pan until cooked through.

2. Place spiralized carrots and zucchini noodles in a bowl. (You can buy them this way or do it yourself.) Add 1 tbsp water. Cover with a plate and microwave for 90 seconds, or until just soft. Drain (and if you are me, drink the green water).

3. Add 1-2 tbsp of your favorite pesto to the noodles. Stir. Top with salmon and enjoy!

 

Easy lunch idea # 2:

Loaded Squash Bowl

The squash had already been baked and this was what I had leftover. To assemble you just:

1. Add in your favorite cooked grain. I recommend bulgur or quinoa.

2. Add in a source of protein. This was beef, but chicken, turkey, beans, eggs, whatever will work.

3. Add flavor! I added in cheese, chopped shallots, butter, garlic, and some spices. Get creative!

4. Microwave for 1.5 minutes, or until hot.

    1. The salmon bowl is TOO GOOD. I ate it for lunch and dinner (plus other stuff, obvs) two days in a row. Its cause I got this crack like pesto sauce at whole foods. Its a tad expensive but I had to get it because under the label on the shelf it said “this is the best pesto sauce. ever. – staff.” They were right.

    For one of my classes we read part of Michael Pollan’s book, specifically the chapter talking about how everything is made from corn, which is turned into sugar…interesting.

    And the HFCS bullcrap bugs the hell outta me. I hate those commercials where the one person is all anti-HFCS and the other person says “it’s all natural! it’s made of corn!”

    Well you know what else is all natural? Cocaine!
