Sweet Potato Apple Bread!

Good evening! I know my last post was kind of a downer, but life over all has been pretty wonderful. I left UC Santa Barbara for another UC school, and although it has only been a month, I am already loving it here. UCSB was seriously a psychological cancer (for me.) I started out there freshman year in the dorms and struggled to find people that I really connected with. I got involved with the triathlon team, and that helped to an extent, but I still ended up going on meds to lift my spirits. Many of the students there are extremely self and party oriented. It’s like the rest of the world doesn’t exist. I stuck it out sophomore year and moved into a house of girls I found on craigslist. They ended up being pretty awesome, and that made the year much more bearable. I also joined a couple student activism clubs and met a few really incredible people. The only downer was how small those groups were! I wanted more. Over all, in my two years at UCSB, I was collectively less happy than I have been in my 30 days here in northern California. Thursday night was one of my 4 house mate’s birthday. We celebrated!

Today, I have just been studying for Biochem. But not really. I actually decided to bake a quick bread out of all seasonal ingredients. I have been meeting more and more people recently that are super sugar sensitive, so I decided to try making my own sugar free recipe. It turned out really well (Alex, you should try it!). It also happens to be low fat. You’d never know by the taste though!

Spicy Sweet Potato Apple Bread

So pefect for fall.

Recipe: Makes 1 loave

Dry ingredients –

1 1/2 cups whole wheat flour, sifted

2 tbsp dried sour cherries (optional, but awesome)

2 tsp baking powder

1 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1/2 tsp pumpkin pie spice

1/2 tsp ground ginger

1/2-1 tbsp fresh grated ginger

Wet ingredients –

1 egg

1 cup 1% milk

50 drops liquid stevia (or sub in 1/2 cup sugar)

1 cup baked sweet potato, mashed

1/3 of a large, sweet apple, chopped into little pieces

2 tbsp butter, melted

Directions –

Place the dry ingredients in one bowl and the wet in another. Mix each separately. Pour the dry over the wet and stir with as few swoops as possible. Pour into a greased 9×5 inch pan.

Bake at 350 for 55 minutes or until it passes the toothpick test.

  2. I love your style! You look gorgeous (as wei wei said!) in these pics! I’m so incredibly happy that you’ve found a place that you’re comfortable at. Not to mention the wonderful goodies that you’re able to cook up in ur apt! In my apt I don’t have all those wonderful spices because I just have a mini fridge, so most everything I leave at home to bake (not that I do it often). Either way, miss yew 🙂

    1. Gah, thank you! I love that dress. Its by the Olson twins – hehe. I bought the Jeffrey Campbell Litas in brown to go with it and they came in a few days ago and they are HIDEOUS. Tacky to the maxx. So I had to sub in some black booties… ;)We have gotta have a meet up sometime this year.

  5. Definitely an October favorite. Looks delicious, and seems like it not the worst thing in the world to eat from a nutritious point of view. Not much of a baker, but can see myself attempting this.

    I love your Blog!! I just had to tell you that I went to UCSB my Freshman year and HATED it! I was very depressed and BORED out of my mind in Isla Vista. The Co-Op was just about the only fun thing for me. Then I transfered to a school in London and life was so much better. I am originally from Norcal, so its nice to know you are happier there,

  10. i don’t know how i survived 5 years at UCSB. oh right! many weekends in LA. a year abroad too. it wasn’t easy, but i made it. :p i wasn’t like-minded with a lot of others, so i actually preferred living away from DP and just stayed on campus. it’s hard to deny though – SB is a gorgeous place.

    1. Woh woh woh. Have we talked about this yet? I cant believe you went to UCSB! I am truly impressed you made it through 5 years. It is gorgeous though! And my education there was superb, its true.

      1. I was determined to become one of those party-hard, work-hard folks, but the partying hard would get in the way of working hard, so I just did a little of both. 😉
