I would LOVE to try these but I think I will add a little of a different kind of flour to this so it holds well togeather perhaps sorghum flour or almond flour, I dont know yet but also someone mentioned it crumbled . . . I believe if a little starch was added it will help (i.e. cornstarch or tapioca starch). Thanks so much for the recipe. I LOVE coconut and muffins and I am definitely going to try this at a later date. Just made some gluten free, egg free and dairy free (due to allergies) pumpkin muffins and must finish this first 🙂
