Barbeque Shrimp & Butternut Squash Pizza
Recipe: Serves 1
1 whole wheat tortilla
1 tbsp tomato paste
1/2 cup mozzarella
1/4 pound shrimp
1/2 cup butternut squash, cubed
2 tbsp Stubbs BBQ sauce
2 tbsp chopped onion
fresh ground pepper
Directions – Preheat oven to 350-375 and place a whole-wheat tortilla on a baking sheet. Spread a heaping tablespoon of tomato paste over the tortilla and sprinkle the mozzarella on top. Cook the butternut squash and shrimp either by steaming or on the grill. To steam really quickly, I placed the shrimp in a bowl with 1 tbsp water, covered with a plate, and microwaved for 1 minute, stirred, and microwaved for another 30-60 seconds. I did the same with the squash, but without water. Toss the onions, shrimp, and squash with BBQ sauce and place on the pizza. Top with oregano, basill, thyme, garlic salt, seasoning salt, and pepper. Bake until crispy to your liking, about 10 minutes for me.
Shrimp * extremely high in protein and low in fat! Contains selenium, tryptophan, vitamin D (key for bone health), B12, iron (needed for a healthy thyroid), phosphorous, B3, and zinc. The fat that shrimp does contain is the healthy monounsaturated kind.
Tomato * have a very high lycopene content. They also contain lots of potassium, vitamin A, C, and folate!
Onion * Contains quercitin, an antioxidant that halts the growth of tumors! Also, studies have linked regular onion consumption with lower cholesterol and reduced risk of colon cancer. A prime source of chromium.
Basil * Has anti-inflammatory properties and antioxidants called flavonoids. Flavonoids protect your cells from damage (and thus, in the long run, cancer).
