Old Faithful

Happy Monday! The weekend really flew by… as they always do. It was a weekend of several firsts, triumphs, and failures for me.

I overcame my fear of stage fright and volunteered to participate in a sorority’s philanthropy event.

I volunteered to play softball (knowing full well that I am wretched at all team sports) and embarrassed myself.  While I was attempting to hit the ball, one guy shouted “I didn’t know we were at a Barry Bonds training camp!” A little humiliation does the soul good, though. We can all use a dose every so often.

I, um, challenged my ethanol dehydrogenase enzyme on Saturday at Picnic Day. I am My liver is glad it is only once a year. (More pictures to come!)

I met lots of new people!

I tried those 150 calorie Skinny Cow ice cream cones… FAIL. I despise low fat ice cream. Just give me a serving of the real sh*t and I’ll be happier than eating a huge tub of fluff.


Today I have for you, not a recipe, but the breakfast I have consumed the most times in the last year, even though I have only mentioned it on the blog once or twice. This is truly my fallback breakfast. Especially when it isn’t cold outside.

Never Let You Down Yogurt Bowl

Bottom layer: 1 cup of plain, nonfat Greek yogurt mixed with (all optional) vanilla extract, stevia, some vanilla protein powder, and vanilla almond milk to thin (I just started doing this because for some reason the thickness of Greek yogurt has been grossing me out lately?)

Middle layer: any of my homemade, whole grain muffins crumbled in. This bowl used my  banana bran muffin recipe, but without added sugar.

Top layer: Nuts (pecans, walnuts, almonds, peanuts, pistachios, brasil nuts), seeds (hemp and sunflower), coconut shreds, and a drizzle of maple syrup

I’m indecisive, so I put it all in there.

This breakfast takes less than 5 minutes to throw together and it always tastes delicious. The key is to have muffins made in bulk and stored in the freezer! I also have jars upon jars of all different types of nuts and seeds. I don’t really worry about the cost of buying them in bulk because I know I will finish it all eventually anyway.

  1. The yogurt bowl NEVER fails! Unless you find out your protein powder sucks. Sometimes I mix in a spoonful of jam too.

    Recipe requests! Oh, ok, here’s a few ideas! Yes, I am selfishly using you to help clean out my pantry.

    – Hemp seeds
    – Coconut flour
    – Nutritional yeast
    – Quinoa
    – Dried seaweed

    Obviously not all in one recipe, unless you’re feeling really creative. Hehe, just a few ideas!

    1. Yes yes yes! Perfect. Thank you. I put hemp seeds in my yogurt bowl… and I have been meaning to make a smoothie that is called The Chronic at a juice place in Austin. It is hemp protein, hemp oil, hemp seeds, frozen banana, hemp milk all blended together. ITS AMAZING.

  2. sounds like you had a fun weekend. I love your pink shirt and jean shorts – so cute! my go-to breakfast is similar, but dairy free with a smoothie in a bowl with a mix of toppings for healthy fat.

  3. Do you add fruit? Is that a 6 oz container of yogurt? I am a big dairy consumer, although I ought not be!
    I have coconut flour here and need more ideas. I’ve googled coconut bread recipes, but a lot of them call for 6+ eggs. I LOVE eggs – but I eat a ton of eggs, dairy, and meats as it is…so I’m wondering if I could make a bread that will use less of that stuff.
    Healthy banana breads or muffins or something with pumpkin ? (using quinoa or buckwheat flours maybe).

    1. I actually dont usually add fruit! Sometimes some banana mashed into the yogurt to sweeten it. I buy giant containers of yogurt and measure out 1 to 1 1/2 cups of yogurt. Nothing wrong with dairy and me 😉 I have coconut flour muffins on my blog!

  4. I don’t mind the skinny cow ice creams! I like the mint ones the best 😉
    I think you should make a whole wheat banana pudding muffin. I made a version without whole wheat but would love it healthified

  5. I tried skinny cow ice cream cups and disliked them as well :(. They taste super artificial.
    Anywho, I have the same problem with softball. I used to be so scared to go up to bat because I knew I wouldn’t be able to hit the damn ball haha. Thank goodness I stuck to swimming! No need to hit anything!

    i also am so so jealous of your major… it sounds fascinating, too bad they dont’ offer anything even remotely related to nutrition at my school :/ (I’m not totally sure if i want to go into nutrition but i looove learning the nitty gritty physiological details of digestion, etc. 🙂 )
