I realized that I never gave any explanations for my long absence from the blog – how rude!
I was busy working and handing out samples at Nugget and Food 4 Less and getting to know my amazing new housemates…

Chels and I are so lucky that we didn’t have a craigslist disaster. Ana and Liz are both so down to earth, kind-hearted, fun, and intelligent to boot.
I successfully completed recruitment with DG. It was, at times, quite the pain in the A – but so worth it. I feel much more connected with the other girls and all of our hard work paid off. We got 42 new girls, an extremely talented and diverse bunch!

I had my first two weeks of classes. I am taking Endocrinology, Experimental Nutrition Lab, and Clinical Nutrition. I am so excited for Endocrinology; I really hope it can help me finalize my decision to go to med school. Experimental Nutrition Lab looks like it should be interesting. We will be conducting a urine analysis to see what our nutrient intake is later in the month… Clinical Nutrition is exactly what it sounds like. And thus far it’s pretty boring.
And today was just your typical, packed kind of day. What was atypical was that all of my meals rocked, despite the rush. Also worth nothing is that this What I Ate Wednesday is E X A C T L Y what I ate. No substitutions or tweaks… And it gets pretty weird.
Breakfast
Vanilla Scented Amaranth Cereal with Coconut and Almonds
Recipe: Serves 1
1/2 cup amaranth, cooked (I made mine the night before)
1 cup greek yogurt (you can also throw in some whey protein powder if you like the taste)
1/3 cup unsweetened, vanilla almond milk
few drops stevia + few drops vanilla extract
dash salt
Toppings: coconut shreds +Â almond slivers + ground flax
Directions – Be sure to properly prepare the amaranth according to directions online. Store in the refrigerator. Combine all of the ingredients in a bowl and stir! Top with toppings of choice.

Lunch
I had to bring my lunch to class so I opted for a wrap and a baggy salad.
A whole grain tortilla spread with garlic hummus and stuffed with roasted butternut squash, avocado, Â turkey, garlic mustard aioli, tomatoes, red onion, and mushrooms.Â
Baggy salad: (Noun). A large serving of veggies and blob of poppyseed salad dressing contained in a plastic bag. To eat, the baggy is vigorously shaken by hand and a fork is used!
Luckily we got out of our 6 hour lab 2 hours early so I could squeeze in my favorite weight lifting workout! Followed up with an amazing…
Cake Batter Protein Smoothie
Recipe: 1/2 frozen banana, 1 scoop cake batter whey protein, 4 drops vanilla stevia, 2/3 cup almond milk, handful ice, and a dash of salt blended well and topped with flax, almonds, and sweetened, shredded coconut!
Dinner
I know this is weird… but I got the idea from the March issue of Shape. It rocked my world.
Lobster PB&J
I didn’t have lobster so I used canned crab instead. Also, you are supposed to cook down the onions, sugar, and vinegar into a thick jam – but I didn’t have the time. I think that would taste amazing, but my version is much quicker!
Recipe: Serves 1
1 slice of whole wheat bread
1 container canned crab
For the chili peanut sauce: 1 heaping tbsp peanut butter, 1 tbsp soy sauce, 2 tsp sweet chili sauce, 1/4 tsp ground ginger
For the onion “jam”: 3 tbsp chopped red onion, 1/2 tbsp red wine vineger, 1 tsp brown sugar
Directions – Combine the ingredients for the addictive chili peanut sauce in a bowl and mix until smooth. Set aside.
Combine the ingredients for the onion “jam” in a dish and mix well. Set aside.
Toast a slice of whole wheat bread. Slather on the peanut sauce. Add a layer of crab. Top with onion jam. Enjoy!
The sweet chili peanut butter sauce was straight up crack. I made more and tossed a bunch of veggies with it to eat on the side.
And, of course, dessert was a salted caramel ice cream cone from Davis Creamery. I wish I had taken a photo!

Just bought some amaranth in a bulk bin sale after having only used it once. I’m thinking about using it for a granola…but I like what you’ve got going on for breakfast! And I am loving the thoughts of that peanut butter sauce!

I’m in naturopathic medical school (www.bastyr.edu). Just thought I’d throw a plug out for naturopathic medicine! Since your heart is in nutrition – and traditional medical school doesn’t encompass that – it might be a route you’d want to consider. I believe this is the future of primary care medicine. Of course, I’m biased. But I got really excited when you mentioned your possible medical school aspirations…because we need people like you in our healthcare system! Good luck! 🙂
