Alright, here’s the deal y’all. I have a few recipes saved up from the last few months that I never posted and I want to get them out there before I give this whole paleo thing a try. Once I have finished all the ice cream, yogurt, cheese, and  BELGIAN WAFFLES in my fridge and freezer, I am going to give full paleo a go for a few weeks. It would seem wrong to post cheesy, bready things during a period where I am not eating cheesy, bready things. That is not to say that paleo excludes delicious meals and treats, but it does exclude grains, legumes, and dairy.

In other news, I finished my senior year of college! I walk on Sunday, but will have to take one summer school session to technically graduate. Everyone says that college flies by, and while I do agree with that to an extent, in some ways it feels like decades have passed. I have grown down, grown up, and everything in between. I actually spoke about my college experiences and had to give advice to my entire sorority a few days ago. During spring quarter, DG seniors take turns doing “Words of Wisdom” at meetings. My turn was last week and I was so nervous I could hardly keep my head up. I decided that if I wanted to make any sort of real impact on any, some, even one of the girls, I needed to be real and raw. No sugar-coating and no “just have fun and partyyyy!” bullshit. People can’t relate to the images that we portray as our true selves. Connections are made when you find that someone has the same inner feelings, desires, struggles or passions as yourself. So, I gave it to them straight. I talked about college and depression, exercise, eating, drinking, studying and boys. When I was done, I had a moment of fear that I had just really exposed myself for no reason, or worse, to be harshly judged. Instead what I found, was that in the couple days following meeting, I was inundated with texts, facebook messages, and house visits thanking me for being honest. Many of the girls are struggling with one or some of the various issues I touched on and several wanted to meet up and talk.  Obviously I am no professional, but being able to be there and actually make a tiny difference has put a perpetual smile on my face. 🙂 Now if only I can find a career where I feel like that all the time…

Lemon Poppyseed Chicken Salad

Recipe: Serves 1

  • 4-5 oz cooked chicken, shredded
  • 2 tbsp mayo
  • 2 tsp lemon juice
  • 2 tsp poppy seed
  •  2 tbsp raisins
  • 2 tbsp onion, diced
  • 2 tsp mustard
  • 2 slices whole wheat bread
  • sliced tomato + lettuce

Directions – Combine the chicken, mayo, lemon, poppy seeds, raisins, mustard, and onion in a bowl and mix. Toast the bread and top each slice with tomato slices, chicken salad, and a leaf of lettuce.

  1. A lot of people struggle but a lot of them just hide it…
    When people share their strories/issues, it just makes us more connected to each others.
    Now I can share my doubts, my fears but my strength too… It’s scary to be exposed, but then you just find out people dont judge because they struggle too =)

    Even if I dont know you, i find you really impressive, mature and grown up !
    I’m pretty sure you are going to have an awesome career ! You creat your own path =)

  5. Congrats on the graduation and awesome public speaking! As for Paleo, I’ll be curious to watch your progress and see how you feel about it. My CF gym is pretty into it and are already asking me if I do it. I’m more clean eating right now, and like you, I love my occasional bready, cheesy goodness treats. And tofu. Good luck!!!

  8. Congratulations! What an amazing accomplishment. And I really admire your courage to be honest like that in front of all those people. I can imagine I would have really appreciated hearing something like that from someone I looked up to. I had noooo idea college was going to be such a whirlwind of crazy ups and downs. But I guess that’s really just how life is in general!
